Smoke Chicken Breast w/Bacon

This started off using beef on the first try, but honestly the chuck beef used dried out way to bad so decide to try it with Chicken and honestly it turned out pretty good. 

Preheat the smoker to around 250-275.

Take a boneless, skinless chicken breast, butterfly them open, drop in a strip of mozzarella cheese and a couple sun dried tomatoes, close up the breast, wrap in bacon, and drop on the smoker for about an hour +.  About 15 minutes before and 10 minutes before removing from smoker I baste with my favourite BBQ sauce (usually home made) and then take em off, let them rest, then serve.


Halloween

Got a little busy with Halloween and didn't get a chance to post some of the experiments I've been trying.  But before I post those, thought I'd share my Halloween fun ;)
